Cook the noodles in boiling salted water, as instructed on the pack, until just done. Drain into a sieve and run cold water over to chill the noodles completely.

Mix together all the dipping sauce ingredients and divide between 2 ramekins.

Put the noodles on 2 plates, scatter over the sesame seeds, grind on some black pepper and serve with the dipping sauce.

  • For the dipping sauce

  • 3tbsp soy sauce
  • ½ vegetable stock cube, diluted with 3 tbsp hot water and cooled
  • 1tbsp mirin
  • 1tsp finely grated fresh ginger
  • juice 1 lime
  • 2 spring onions, finely chopped
