Preheat oven to 180°c and line loaf tin.
In a jug whisk together the olive oil, milk & eggs. In a large bowl, combine the flour, cheese, baking powder, chives, corn and salt. Pour in the milk and egg mixture, stir, you should have a sticky dough.
Transfer to the loaf tin and bake for 45 mins. After the 45 mins then cover with foil and bake for a further 30 mins. After cooking time, remove from oven. Leave to cool for 10 mins. Revove from loaf tin. If you do not have any fresh chives... dried is ok too.
Great to eat warm or cold. Can be stored for a few days. You can also slice and toast if desired.
Fantastic as a snack on the go.... or with a main meal.
Lovely with butter on the top.
