Country cottage pie with cheesy mash recipe

Heat the oil in a heavy based pan and brown the mince and onions on a medium heat. Drain off the excess oil and mince fat and return to pan.

Add all of the ingredients except the flour at this point and stir well. Once it is all combined sieve the flour into the mix and again keep stirring - this will stop the flour from forming lumps. Leave to simmer for 40 minutes.

Preheat the oven to 180° C.

Boil potatoes until they are able to be broken easily with a fork. Add your onions, seasoning and soft cheese and mash until no lumps remain.

Using a slatted spoon fill the bottom of your pie dish with the mince mix. Place the mash ontop of your mince and level out so completely covered, sprinkle with cheese and seasonings.

Bake in the oven for 30mins or until the cheese is browned and crispy around the edges.

Tip

You dont have to use cream, you could use milk or simply omit it altogether. It just adds that luxury feel to the potatoes.
