Preheat the oven to Gas 6, 200°C, 180°C fan, 400°F. Roast the peppers on a non-stick baking tray for 10 minutes, or until softened but still holding their shape.
Meanwhile, pour 150ml (¼pt) boiling water over the couscous and leave to absorb for 10 minutes.
While the pepper cooks, heat the oil in a non-stick frying pan, and fry the onion for three minutes or until softened.
Add the lemon juice and zest, apricots, coriander, feta cheese and cooked onion to the couscous.
Spoon into the roasted peppers to stuff, and serve.
