I‘m sure, like many, I discovered this recipe while searching for ideas on how to use up cranberry sauce. However... they are so good that I now buy cranberry sauce specifically to make these muffins. Wonderfully festive and just the right level of sweetness to be cakey but not too sweet by comparison with the many festive treats we ‘over indulge‘ on this time of year. In fact, they are absolutely perfect for breakfast or branch and the recipe is so quick, you can make them fresh for the occasion.
Preheat the oven at 180C. Put 12 muffin cups into a muffin tin.
In a bowl mix together the flour, sugar, salt and baking powder. In a separate bowl or jug lightly whisk together the milk, vegetable oil and milk.
Add the wet ingredients to the dry ingredients and mix until just conbined. Add the cranberry sauce and gently stir through.
Spoon the mixture into the muffin cups (distributing evenly). Bake for 18-20 minutes until risen and an inserted skewer comes out clean.
Leave to cool in the tin for 5 minutes then remove onto a cooling rack and allow to cool completely.
** Tips **
Careful not to over mix the batter - this will make the muffins tough. Lumps will dissappear during the cooking process.
Stir rather than blend in cranberry sauce so you end up with swaths of the sauce through the muffins (pretty and juicy!).
It‘s important to use a tart (rather than sweet) cranberry, otherwise the muffins are overly sweet. I now use a 200gm jar of Tesco own brand cranberry sauce which has the right level of sweetness and lots of cranberrys for added texture (http://www.tesco.com/groceries/product/details/?id
