Bring a large pan of salted water to the boil, add the pasta and cook following pack instructions until Ã¢â‚¬Ëœal dente', tender yet still with a slight bite.
Meanwhile, heat the oil and butter in a large frying pan. Add the spinach and garlic and cook for 2 mins, or until the spinach is just wilted.
Pour in the cream, crumble in the blue cheese and add the tarragon, and cook on a low heat, stirring frequently for 3 minutes.
Drain the pasta, tip into the sauce and stir for 1 min until the pasta is well coated in the warm sauce. Season with salt and ground black pepper.
