Creamy Chicken & Bacon Pasta

I like recipes which are quick, easy, and fairly low in calories, but will still satisfy a family of four.

Add the olive oil to a large pan, and gently fry the onions. Dice the chicken thighs and add to the pan, and cook over a medium heat for five minutes or so until the chicken starts to turn golden. Take the peas out of the freezer and defrost them a little in a mug of hot water (it soon goes cold but the peas do defrost).

Add the bacon lardons to the pan and cook for a further five minutes, while you‘re roughly chopping the mushrooms. Add the mushrooms and stir occasionally to keep things from sticking.

Start off another big pan with some boiling salted water, ready to take the pasta. The chicken should have had a good 20 minutes cooking on a medium heat, so should be pretty much cooked through, and add this point I add the Philadelphia Light with Garlic and Herbs. Give things a good stir and if you think it needs it, add a couple of tablespoons of water to loosen the sauce.

Add the Tesco Finest Gigli Pasta to the now boiling water, and set the timer for about 5 - 7 minutes (depending on how al dente you like your pasta), turn down to a simmer.

I chop the Purple Sprouting Broccoli into small florets, and add to the pan of creamy chicken along with the peas, and allow to heat through while the pasta is cooking.

When the pasta is ready, drain off most of the cooking liquid, but don‘t be too fussy, then add the pasta to the chicken. Mix carefully but thoroughly so everything is well coated in the sauce and the chicken is well distributed.

Serve with a sprinkling of grated Parmesan and a nice glass of wine :)

I always buy skinless and boneless thighs so they‘re easier to prepare, or you could use the mini breast fillets or packets of diced chicken. This meal works out at just under 600 calories per portion.
