Pour the olive oil into a hot frying pan, when heated add the sliced garlic and cook for 1 minute, continually stirring so the garlic does not burn. Tip in the roughly chopped mushrooms and toss briefly, fry until cooked. Add the chopped tomatoes and stir, cook for a few minutes.
Then add the spinach (in batches) and stir again. Simmer away the liquid until you are left with a thick mixture.
Layer the mixture between the lasagne sheets and dollop on the lasagne sauce on the top and grate on the cheese. Cook in the oven for 40 minutes!
