Wash and then finely chop the chives.
In a large mixing bowl blend the crème fraîche and chives together and then mix in the paprika (Keep some chives and a little paprika back for dusting and garnish). Add a little salt.
Whisk the ingredients together quickly so that they are well blended and the dip takes on a light paprika colour. Put into serving bowls, garnish with chives and a sprinkle of paprika.
For a spicier alternative, you can add a sprinkle of crushed red chillies. You can also substitute the crème fraîche for good quality mayonnaise if you prefer a more savoury dip.
