Creamy pepper pasta with smoky bacon recipe

The sweet peppers and salty bacon go fantastically with the creamy sauce which sucks into the pasta tubes, a great family favorite. Kids love peeling the skins off the peppers making them feel a part of the dinner and more willing to eat it. A bit short of time? don‘t worry about skinning the peppers, chop and soften them with the onions.

Slice the cheeks off the peppers and place skin side up on a grill pan.

Grill until the skin blackens and blisters. While hot, place in a bowl and cover with clingfilm until cool.

Rub off the skins and tear the peppers into chunks

Finely chop your onion and soften in the oil

add the chopped bacon and brown

add a crushed clove of garlic

add the peppers, chopped tomatoes, oregano, salt and pepper, bring up to a simmer. Leave to bubble gently for about 20 minutes stirring occasionally.

boil a pan of water and cook your pasta according to pack instructions

just before the pasta is done stir in the cream cheese and ripped basil leaves to the sauce

drain your pasta and toss into the sauce

top with grated parmesan and fresh milled pepper

serve with salad and fresh garlic bread

You could vamp up your dish with a handful of chopped capers or olives or both.
