Put the rice on to boil for approximately 30mins or until cooked.
Meanwhile, finely chop the leek. Fry in a non-stick frying pan on a medium heat with the salmon fillets until the salmon is cooked.
Drain the rice. Return to a low heat and stir in the frozen peas. Flake in the salmon and add the leeks, continuing to stir. Add the basil and black pepper to taste.
Remove from the heat and stir in the natural yogurt. Divide between two dishes and serve, or refrigerate until cool for a nice rice salad/lunch on the go.
If you like a bit of heat, finely chop a red chilli and fry with the leeks. It adds a nice bite to the dish.
