I love experimenting with flavors and combinations, I will never stick to a recipe without adding something of my own into it. I am a sweet bakes maniac.

Star by making the syrup. Wash and cut the strawberries into chunks. Peel the clementines and remove all the white skin from the fruits, otherwise the syrup will be bitter. Add them to the pan along with the sugar, cinnamon stick and lemon juice. Boil for 10 min. Or until the sugar melted and the fruits are soft. Set aside.

For the crepes make the batter as follows: take a large bowl, add the egg, milk and the desseded vanilla pod. Whisk until combined, then add the flour and bicarbonate of soda. Whisk again until everything is well combined, your consistency should be creamy, not runny. If needed add more flour.

In a frying pan add 2 drops of unflavoured oil such as vegetable oil and heat. Keep the heat on medium. As a measure for each crepe I use a ladle, 1 ladle per crepe. Add 1 ladle of batter to the hot pan and swirl the pan so the batter will equally cover it. Leave the crepe 1 min on each side or until golden.

Dressing up : Fold the crepes and place them side by side. Add the syrup on top of them and serve with whipped cream on the side.

You can use any toppings of your choice. The batter recipe will be the same. Do not add sugar in the batter, otherwise the batter will stick to the bottom of the frying pan.
