Break eggs and mix in a bowl. Dice cheese in small cubes and mix with the eggs.
Add olive oil to frying pan and heat for 2 minutes, pour the egg and cheese mixture into the pan and cook for 2 mintues. Make sure you tilt the pan to coat the whole surface. Once the mixture has set flip it over and sprinkle with dill and herbs. When both sides of the omelette are a golden colour take off the heat.
Serve with hot toasted bread and fried tomatoes.
