I like to make things from scratch but only if they are quick and easy! Working mum of three (Dexter 3, Mae 2 & Scarlett 4 months) I am always keen to try cooking new things with the kids, which is how experimenting with this recipe became popular in our
Put the puffed rice cereal into a plastic bag and use a rolling pin to lightly crush. Add seasoning to bag.
Crack egg into a bowl and whisk briefly to mix yolk and white.
Dip each mini fillet, into egg mix to coat.
Then dip into puffed rice mix until evenly coated with cereal. The easiest way to do this is to put them straight into the puffed rice bag and shake.
Place fillets onto lightly oiled baking tray.
Drizzle fillets very lightly with a little oil - you don‘t need alot.
Bake in a preheated hot oven (190 degrees / gas mark 5) for approx 20 mins until chicken is cooked. Turn half way through cooking to ensure the fillets are crispy all over.
This recipe is very adaptable and so quick!
You can use fish for this dish too to make your own fish fingers.
If you don‘t have puffed rice cereal you can use corn flakes instead.
To spice this dish up for adults, try adding garlic powder, thyme, chilli powder & paprika to make a southern style coating.
