Crispy oregano and lemon potatoes recipe

Preheat the oven to Gas Mark 5, 190°C, fan 170°C. In a bowl, toss the potatoes with the olive oil, garlic, lemon zest and oregano. Season well. 

Arrange the potato slices in a single layer on one or two large baking trays. Roast for in the oven for 35 minutes or until golden and crispy.
