Add the diced potatoes to a pan of boiling water, boil for 10-15 minutes till soft. Saute the onions in the olive oil for 5 minutes. Add the crushed garlic, chilli, basil to the onions, cook for 1 minute.
Add the tin of chopped tomatoes to the onions, simmer slowly for 10-15 minutes. Add the sugar to the tomatoes and add the bay leaf, add salt and pepper, keep stiring.
Fry the potatoes in olive oil, spoon the onion and tomato sauce into bowls. Pile the potatoes on top of the sauce.
Make a large batch of onion and tomato sauce and freeze in portions.
Garlic bread is nice with this dish to dip into the sauce. If in season, new potatoes are tasty in this dish.
