Preheat the oven to 200°C, 400°F, gas 6.
Put the potatoes into a large pan of salted water, bring to the boil and simmer for approximately 10 mins. Heat up the oil in a large roasting tin until very hot.
Drain the potatoes in a colander and give them a good shake to fluff up round edges and then carefully tip them into the tray of hot oil. Put the tray into the oven for about 30 minutes, turning the potatoes once or twice, then cook for another 15 minutes and you should have perfectly crispy roast potatoes.
