Heat the sunflower oil in a large non stick pan and add the shallots, garlic, grated carrot, sliced red pepper and Quorn mince. Stir fry over a medium high heat for 5 minutes then add the sweet chilli sauce, lime zest and soy sauce. Cook stirring for a further 5 minutes over a high heat, so the mince browns a little. Toss in the coriander.
To serve, carefully remove as many of the larger outer leaves from the little gem, rinse well and shake dry. Arrange onto a large serving platter and fill each little gem “cup” with a little of the quorn mince mixture.
