Crouquettes (Salmoooon) recipe

Mix salmon with mayo, mustard, egg, breadcrumbs and lemon juice. Form into patties and refrigerate for 30 minutes. Coat in more breadcrumbs and sautee in oil over medium heat for 8 minutes on each side, until golden and cooked through.

Cook pasta side according to packet. Serve with spinach.

  • 400g salmon fillets
  • 2-3 tbsp mayonaise
  • 1 tsp dijon mustard
  • 1 egg, beaten
  • 1/2 cup breacrumbs, plus enough to coat
  • 1 tbsp lemon juice
  • Some oil
  • 1 bag spinach
  • 2 knorr pasta side or equivalent
