whisk egg white until stiff
whisk in half the sugar
stir in rest of sugar
split mix into 3
add red colouring to one portion and blue to a second stirring well to mix, leaving third white
place each colour into a lined round 6 inch baking tin
cook for 1 hr at 110 oC for 1 hr, turn oven off and leave in oven over night to dry out.
Next day whisk cream and sugar together to a consistency you can pipe. pipe cream round edges of 3 meringues and spread across middle of red and white.
assemble meringue in order red/white/blue and add chopped fruit to the layers.
pipe diagonals of cream on top layer and add small pieces of strawberries to out piping and a whole strawberry in the centre.
This makes a nice chewy meringue, for a drier finish cook for 1.5 hrs beofre turning oven off.
