Preheat the oven to 200°C (180°C fan) / 400°F / Gas Mark 6.
Working quickly, wrap the dates with the shredded pastry. Brush with the melted butter and arrange on baking trays lined with nonstick baking paper.
Saturate the wrapped dates with the honey, then sprinkle them with the sesame seeds so that they stick to the dates. Bake for 15-20 minutes until the pastry is golden brown in colour all over.
Remove from the oven and let them cool on wire racks before serving on plates.
