Preheat the grill to hot. Line a baking sheet with nonstick baking paper. In a large bowl, combine the minced lamb, ground spices, cumin seeds seasoning and egg yolk until well combined.
Using oiled hands, take tablespoons of the mixture and roll between your palms to make balls. Thread onto wooden skewers, three per skewer.
Arrange on the baking sheet and grill for 8-10 minutes, turning occasionally until well browned all over with no pink showing.
Meanwhile, arrange the salad, cucumber and tomato on serving plates and sprinkle over a few cumin seeds. Arrange a couple of kebabs on each salad and serve.
