Mix together the spices and seasoning and stir into the chunks of chicken.

Heat the oil in a large frying pan, to a medium to high heat and add the chicken, peppers and onions.

Stirring occasionally, cook for 8 minutes until the meat is cooked through with no pink showing. Meanwhile in a separate bowl, mix together the yogurt and mint and set aside. Add the tomatoes to the chicken and cook for a final 2 minutes.

Heat the Uncle Ben’s Express Pilau Rice and serve with the chicken and yogurt.

  • 250g (9oz) boneless, skinless chicken breasts, cut into small chunks (roughly 2 chicken breasts)
  • 2.5ml (1/2tsp) garam masala
  • 2.5ml (1/2tsp) turmeric
  • 5ml (1tsp) hot paprika
  • salt, to season
  • freshly ground black pepper, to season
  • 15ml (1tbsp) oil
  • 1 green pepper, deseeded and cut into chunks
  • 1 red onion, cut into wedges
  • 30ml (2tbsp) natural yogurt
  • a sprig or two of fresh mint, chopped
  • 4 tomatoes, quartered
  • 250g Uncle Ben’s Express Pilau Rice
