Mix together the spices and seasoning and stir into the chunks of chicken.
Heat the oil in a large frying pan, to a medium to high heat and add the chicken, peppers and onions.
Stirring occasionally, cook for 8 minutes until the meat is cooked through with no pink showing. Meanwhile in a separate bowl, mix together the yogurt and mint and set aside. Add the tomatoes to the chicken and cook for a final 2 minutes.
Heat the Uncle Ben’s Express Pilau Rice and serve with the chicken and yogurt.
