Preheat the oven to Gas 4, 180°C, fan 160°C.
Put a large pan of water on to boil. Peel the potatoes and cut into 2.5cm (1in) cubes. Boil them until they are soft then drain and mash until smooth, adding a knob of butter and 2tbsp milk. Set aside to keep warm.
Brown the mince in a frying pan. Once it is evenly browned, add curry sauce to taste and bring to the boil.
Pour into a large ovenproof dish and top with your creamy mash. Grate cheese over the top and place in the oven for around 20 minutes to brown off!
