Preheat the oven to 180° C.

Make an incision in each chicken breast about 4-5 cm long down one side. Slice mozzarella and stuff each chicken breast with equal amount. Wrap each chicken breast in smoked bacon as tightly as possible using two slices if necessary.

Place each chicken breast on a square of foil in the middle, bring the front of foil and back together and twist down towards the chicken, twisting the ends and turning upwards.

Place chicken into oven cooking for about 25-30 mins until the chicken breast is cooked throughout checking underneath bacon as to not spoil presentation. When chicken is cooked, open up the foil parcels and put chicken breasts on a foiled baking tray, place back in the oven to crisp up the bacon. Turn oven down by about 20 degrees so as to not overcook the chicken. Check frequently, turning oven down again if required.

While chicken is finishing off, cook wedges according to instructions.

Add the 4 corn on the cob to boiling water and cook to instructions, while they are boiling add 3-4 large spoons margarine to a pan and melt gently over a low heat. Drain the cobs and stick with skewers, dipping and turning in melted butter, place all the way to one side of a small food bag and turn until wrapped tightly, tying with a small tie if necessary,and place cob down on a dish bag.

Squeeze half the honey bbq sauce to a pan, slowly adding boiled water from the kettle and over a medium heat until desired consistency and hot throughout.

Prepare the lettuce, tomatoes, and cucumber and coleslaw presentably on a plate.

Remove chicken from oven, it should be a nice colour on the edges of the bacon now. Add to the plates, pour over the hot bbq sauce and top with cheese, serving immediately.

Preprepared lettuce will save time, don't be afraid of making plenty of sauce and it should pour nice and easy. Too watery or too thick and it won't work as well. Own brand mozzarella works just as well, its what I use.

Serve corn on the cob on a separate plate so everyone can help themselves as there wont be much room on the plate with the chicken on. Try to time all your cooking and preperations so that the wedges, chicken, sauce and corn are ready together so nothing is going cold. Enjoy!
