Balsamic tomato and chicken pasta salad recipe

tastier than a soggy sandwich, filling yet light, great take to work lunch

Season and roast chicken breast for 25 mins gas 5. When cool, cut into bite sized pieces

quarter tomatoes, place in an ovenproof dish, drizzle with oil and vinegar, season and roast for 15 mins. The juice from this becomes your dressing

Cook pasta according to pack instructions, drain and rinse in cold water to cool.

combine all ingridients in a Tupaware container, give it a shake and place in the fridge over night.

When ready to serve give it an other shake and enjoy, great with a chunk of fresh, crusty bread to mop up the juice

  • stick celery, diced
  • 2 tbsp Balsamic vinegar
  • 2 tbsp extra-virgin olive oil
  • 75g Tesco finest gigli pasta
  • pinch Sea salt
  • grind Black pepper
  • bunch basil leaves, torn
