Banana loaf with custard recipe

Preheat oven to 200°C/400°F/Gas 6.

In a mixing bowl mix together the butter, honey, vanilla essence, banana, milk and eggs. Then add the flour, baking powder, bicarbonate of soda, ginger and cinnamon and mix together. Pour the mixture into a greased loaf tin and bake in the oven for 50 minutes or until cooked.

The cake is ready when a skewer is inserted and comes out clean.

  • 3x bananas, ripened and mashed
  • 150ml milk
  • 2x large eggs
  • 280g plain flour
  • 2tsp baking powder
