Beef and mushroom stew recipe

Heat a large frying pan with the oil. Add half the cubed steak and seal, turning over now and again, then add the rest of the steak and repeat the process.

Place the red onions, garlic and red wine into a separate large pan, bring to the boil then reduce the liquid by half. When onion mixture is reduced, add the browned meat, celery, bay leaf, water, orange rind, Worcester sauce, salt and pepper, bringing back to the boil.

Cover and reduce to a medium heat. Simmer for 1 hour then add the sliced mushrooms and continue to simmer for another 40 minutes.

Serve with red cabbage and mashed potatoes.

Tips: You can also enhance this recipe by adding sliced or julienne carrots, rosemary, thyme or juniper berries.

The recipe can also be done in the slow cooker.

  • 450g (1lb) mushrooms, sliced
  • 1 bay leaf
  • 1 orange, rind
  • a splash Worcester sauce
  • 3 stalks celery, sliced
  • black pepper and salt, to taste
