blackberry mascarpone mousse recipe

My best friend has used this family recipe for years and passed it on to me. Yummy!

put blackberries in pan with rounded tablespoon of sugar. Gently heat until the juices run. Simmer for 5 mins until berries are just soft. Press through a sieve and leave to cool

Put egg whites into a bowl with remaining sugar and set over a pan of simmering water. Whisk until the meringue is marshmallowy. Take off heat and whisk for 2 further minutes.

In a bowl beat the mascarpone with a wooden spoon, then beat in the puree. Fold in half the meringue using cutting action. Then fold in the rest of the meringue gently

Turn into a serving dish and chill for an hour

Don't over beat the mix at the end - it will knock out all the fluffyness
