Using healthier sugar and less of it

In a small saucepan heat the butter and sugar. Let it cool.

Beat the eggs in a mixing bowl and add the butter and sugar.

Sift the flour and baking powder and beat using electric whisk.

Line or grease cupcake tray and preheat the oven.

Spoon and half fill each cupcake and bake in the oven for 20 min. Check with a skewer and let it cool.

For the Icing: Mix 50g butter, 60g icing sugar and 2 teaspoon of vanilla flabour. Add milk to make the mixture thinner if needed. You can also add any food colouring you wish.
