Carrot and coriander soup recipe

Chop up the carrots into chunks, heat through in a dry pan for a few minutes then add hot stock and season. Roughly chop the coriander and add half to the pan, leave to simmer for 45-60 mins, add the rest of the coriander and blitz if you prefer and serve with fresh bread!
