Preheat oven to 190 c / gas 5
Bring a large pan of lighlt salted water to the boil. Add pasta and cook for 8-10 mins or until al dente, drain and set aside.
Heat the oil in a large deep frying pan over medium/ high heat. Add the chicken and lightly brown on all sides.
Add the red pepper and chorizo and cook for 5 minutes until the chorizo is hot and the chicken is no longer pink in the centre.
Add the chillie flakes and cook for 1 minute. Add the passata, bring to a simmer over medium/high heat, then reduce heat to medium/low and simmer for 5 minutes, until the sauce has thickened.
Add the drained pasta to the frying pan and mix well. Spoon the mixture into an ovenproof dish, Add about a quarter of the cheddar and mozzarella mix and stir into the sauce mixture. Sprinkle the remaining cheese over the top. Bake in the centre of the oven for 30 minutes or until the top is golden.
For a richer taste 250ml of single cream can be added to the passata ( reduce the amount of passata to 300g if you do this.)
