Chicken Cacciatore recipe

This is a winner with everyone in our house.

place 1tbsp oil in a deep frying pan and heat through. Add the chopped chicken breasts and colour on all sides. Remove from the pan.

Heat the remaining 1tbsp oil in the pan and add the onion and red peppers and fry for 2 minutes.

Add the garlic and cook for 3 minutes further.

Return the chicken to the pan then add the remaining ingredients. Stir well.

Bring to the boil then reduce to a simmer and cook for 15 minutes or until the chicken is cooked through.

Bring a pan of water to the boil and add the pasta. Use a fork to make sure the pasta is covered with water and bring back to the boil. Reduce to a simmer and cook until done (12minutes or so.)

Put the pasta in a serving bowl and serve the chicken and sauce on top.

  • 1 finely diced red pepper
  • 1-2 cloves peeled and crushed garlic
  • 400g canned chopped tomatoes
  • 2tbsp red pesto
  • 1 cup Beef stock
  • 1tbsp balsamic vinegar
  • 300g Tesco Finest Fusilli Lunghi
  • 2tbsp olive oil
