As an unorthodox student I don‘t really have time to socialise, go our or even have an odd tipple. Spending most of my early years watching my mother cook and bake, I picked up a few tricks along the way. However, many years passed and I become a more avi

Gently melt the chocolate in a pan, mixed with the double cream. Continue to stir to prevent burning and curdling. When completely mixed, place into a glass bowl and leave to settle at room temperature for 1-2 hours

Preheat the oven to 180C/350F/Gas mark 4. Gently melt the knob of butter and use to grease two 20cm/8in sandwich tins (preferably silicon)

Sieve the sugar and add the butter into a large mixing bowl. Using a silicon spatula cream together until mixed and smooth. Go on, let them dip their fingers in for a sweet treat

Mix in each egg, one at a time with a pinch of flour

Sieve in the flour and cocoa powder with the oil, milk and vanilla flavouring until a rich and smooth look grows a lusting desire in their eyes

Separate the mixture into the sandwich tins and smooth over with the spatula. Place into the oven for 50mins - 1hour

After 50mins - 1hour, remove the cakes from the oven and pop onto a cool surface and wait until fully chilled

When both the cake and icing are set and chilled, apply one sandwich with the chocolate and cream mix. Then top with the second sandwich and apply the rest of the mix. Spread all over the cake until completely covered. For that little bit extra, add some decoration to finish the cake of, sweet or strawberries make a perfect accompaniment - or both! Then give the kids the best in classic treats, the icing bowl!

Finally place the cake into the freezer for 10 minutes. Then move to fridge. Will keep for 4-5 days

Enjoy with a splash of cream or custard. For a real mouthwatering experience, pop into the microwave for 1 and a half minutes and add a scoop of ice-cream

Tips & Tricks: Silicon spatulas help to give maximum mixture to the desert. Silicon bake ware is great for baking as it heats accordingly and allows for easy removal of the cake itself. For faster cooling, sit near an open window, just like gran would. Remember, you‘re not a professional chef and kids don‘t expect perfection, just as long as it tastes nice. So if your artistic skills with the icing leaves you feeling less Pablo Picasso and more pfft! Don‘t worry, it make it just that little bit more perfect
