In a small bowl mix the finely chopped garlic, coriander and sea salt. Cut the aubergine sideways into half, then slice evenly into 8 strips.
Lay them on a plate,steam cook for around 8 to 10 mins, becareful not to over cook them.
Spread the ingredients on each strip of aubergine, let it marinate for 10minutes before serving.
Tip: Depending on the size of aubergine, some may take longer to steam, make sure not over cooked, otherwise it become too soft.
