Cranberry and mozzarella stuffed chicken breasts in Parma ham recipe

Inspired by a panini in a coffee shop and a Tesco Orchard campaign for Tesco Finest meats.

Pre-heat your oven to gas mark 4

Grate mozzarella.

Slice pen the chicken breast.

Add the mozzarella and cranberry jelly to the centre and close it over.

Wrap the breast in the Parma ham

Place in a casserole dish with a lid. This will stop it drying out. Put into the oven for 30 mins. Check they are cooked before you remove them.

Add the oil and vinegar to your salad or use your favourite dressing.

Serve with the side salad and enjoy!

Slice open the chicken breast like you'd slice open a bread roll. Pushing down on it can make it easier to cut. Gas mark 4 is 180°C or 350°F. You may need a higher temperature if your oven is not fan assisted. If you prefer, you can use bacon instead of Parma ham.

  • 50g Grated mozzarella cheese
  • 1 heaped tbsp Cranberry jelly
  • 2 slices Parma Ham
  • 45g Tesco baby leaf and rocket salad
  • Splash Olive oil (Optional)
  • Splash Balsamic vinegar (Optional)
