I found this soup recipe from a very old recipe book. I like to make this soup because it is so simple and nutritious.

Peel and roghly chopped the carrots and potato. Place the vegetable in a pan with vegetable stock and cook for 15 minutes.

Place the soup in blender. add in flour and coriander. Blend for 30 seconds till the soup is smooth.

Pour the soup back in the pan and bring to the boil. Season with salt and pepper. Stir in the cream. Serve.

Sprinkle some chopped fresh coriander to garnish.

  • 700ml vegetable stock
  • 1 tablespoon Ground coriander
  • 2 tablespoon Double cream
