Decorated easter egg biscuits recipe

Cream together the sugar and (softened) butter until light and fluffy.

Add the egg and vanilla extract and mix well.

Add the (sifted) flour and mix with a spoon until a soft ball of dough is formed.

Wrap the dough in cling film and chill until firm (approx1 hour)

Line two baking sheets with greaseproof paper. Preheat oven to 180C.

Roll the dough out on a lightly floured surface to 0.5cm thick and cut out egg shapes with a cutter. Place on baking trays.

Bake for 10-12 minutes, or until the edges of the biscuits are golden brown. Remove from the oven and leave to cool on a baking tray.

Prepare the royal icing: Mix the icing sugar, egg white powder and water together to form a soft paste. Whisk with a hand whisk or electric mixer until soft peaks form (add more water if needed).

Place quarter of the icing in a separate bowl. Add a few drops of yellow colouring to the large portion of icing and mix well. Add pink colouring to the smaller portion of icing and mix well - adding more colouring, as needed, until desired colour is achieved.

Place the yellow icing into a piping bag with a no.2, or fine piping nozzle and pipe an outline around the each biscuit. You may need to add more water to achieve a piping consistency.

Add some water to the yellow icing until a double cream consistency is achieved. Place in a new piping bag and fill the outline of each biscuit with the icing. Leave to dry overnight.

With the pink icing, pipe lines or patterns onto the eggs to decorate. Sprinkle with sugar balls or add sugar decorations. The biscuits can be decorated with as many colours as you like - just divide the icing into small bowls and add different colours to each portion.

Leave to dry and package in cellophane bags or gift boxes for a lovely easter gift.

A similar result can be achieved using pre-made icing tubes and decorations available from most supermarkets. Ready roll icing can also be used to decorate the biscuits. They are also delicious dipped in melted chocolate and then left to harden, or enjoyed plain.
