We went for a birthday meal in a French restaurant and this is my version of the starter.

Halve the melon, remove the seeds and scoop the flesh into a large mixing bowl.

Put the empty melon shells into the freezer.

Peel kiwi and chop the flesh and place in the mixing bowl.

Skin and stone the peach, chop the flesh and place in the mixing bowl.

Peel the banana, slice and place in the mixing bowl.

Using a hand mixer or juicer, pulp the fruit mixture until smooth.

Add Pineau and ginger and mix again.

Place bowl in fridge to cool/chill

Just before serving pour the mixture into the two (now frozen) melon shells and serve with a straw.

Enjoy!

Using banana will make the mixture thicker but it works fine without. Would be a great breakfast meal too. I think it would make a nice ice cream sorbet but I haven't tried that yet. Freeze any excess as ice cubes to add to summer drinks.it
