Preheat the oven to 160°C.

Mix all of the dry ingredients together. Stir in banana, vanilla extract and honey/maple syrup. Add nuts, dried fruit and seeds.

The mix should be thick enough to mould into balls, if not, add some more oats.

Form into round cookie shapes or bar shapes as desired. Bake for about 15 minutes.

Tip: The ground oats could be replaced with any flour that you prefer, e.g. plain wheat flour, rice flour, etc.

  • 200g oats, ground to powder
  • 1tsp baking powder
  • 2tsp ground cinnamon
  • ½tsp salt
  • 2tsp vanilla extract
  • 100g honey or maple syrup
  • 100g chopped nuts
  • 50g chopped dried fruit, e.g. dates, apricots, raisins, etc
  • 50g mixed seeds, e.g. sunflower, sesame, pumpkin, etc
