I have been asked to share my thoughts via the Orchard at Tesco on responsibly resourced fish and this is the meal I created with the fish I purchased with the vouchers that were sent to me
Place the knob of butter in the griddle pan, heat until hot, lower the heat and place in the cod loin, the asparagus, broccoli either par cooked new potatoes or tinned potatoes. Sprinkle the fish with the seasoning and cook for 5/7 minutes each side (or to taste depending on how you like your fish) turn the vegetables whilst the fish is cooking.
Serve with rocket and warmed through plum tomatoes adding some lemon juice to the fish if liked
