me and my husband try to eat healthy but like a piece of cake for work or after lunch so I devised this recipe

Mix together flour, coconut, baking powder, baking soda and salt in a bowl.

Combine banana, oil and honey.

Stir into flour mixture quickly but gently until just combined.

Spread batter evenly in a lightly greased 8 x 4 inch loaf pan.

Bake in gas 4 degree oven 20 to 25 minutes until tester inserted in center comes out clean.

Do not overmix (Batter will be rough or lumpy and stiff).

  • 0.5 cup dessicated coconut
  • 2 tsps baking powder
  • 0.5 tsps Baking soda
  • 3 ripe bananas
  • 3 tbsp Vegetable oil
  • 3 tbsp honey / golden syrup
