This is a family favourite, very cheap and tasty. All my daughters love it and make it to this day
Toast the cumin powder in a dry pan until is just begins to darken, remove from the heat immediately. This will only take a few seconds. It will become bitter if burnt.
Cook the penne according to the instructions on the packet
Finely chop the onion and fry for a few minutes to soften, add the crushed garlic and and continue to cook gently until soft, stir in the tomato purée and cumin then the tinned tomatoes and defrosted spinach and continue to cook for a 3-4 minutes.
Add the cooked penne and mix well.
You can add as much garlic as you like to this dish. It can be eaten hot as a main or cold as a salad.
