I recently bought a big bag of limes at a reduced price and decided this would be a good recipe for them.
cream together the butter and golden caster sugar.
lightly beat the eggs and gradually add these along with the lime zest.
Fold in the seived SR Flour and salt.
Add the milk.
Spoon the mixture into a loaf tin - 23 x 13 x 7 cm. Bake for 45 minutes on 180C.
Allow to cool and whilst cooling make around 8 holes using a skewer.
