Mediterranean Roast Vegetable Pasta recipe

Preheat oven to Gas 6/200°C/Fan 180°C.


Spread the peppers, onions, chillies and garlic in a roasting tin. Drizzle with olive oil and mix well. Season with salt and pepper. Roast for 15 minutes.


Bring a large pot of salted water to the boil for the pasta.


Add the tomatoes to the roasting vegetables and mix well. Return to the oven for 15 minutes.


Meanwhile, cook the pasta until al dente.


Drain the pasta and tip it into the roasting pan with the vegetables. Mix well, adding more olive oil if necessary. Serve from the roasting pan, sprinkling the pasta with Parmesan and torn basil leaves.


Chicken or shrimp may be added to the vegetables if desired.

  • 1tsp sugar
  • 3tbsp extra virgin olive oil
  • 500g (1lb) cherry tomatoes, halved, or plum tomatoes, quartered
  • 350g (12oz) short pasta
  • 4tbsp Parmesan cheese, grated
  • handful of basil leaves
  • salt and freshly ground black pepper
