Preheat oven to Gas 6, 200°C, fan 180°C.
Slice all vegetables and chop the chilli finely. Lay the vegetables on a baking tray and drizzle olive oil over them. Cook them in the oven for about 20 minutes or until they soften.
Take the vegetables out of the oven and, when slightly cooled, place in a plastic bag and keep sealed for 5 minutes, this will make them soften further.
Grate or slice the mozzarella and chop the basil fine.
Mix tomato puree and garlic with water and the basil so that there is enough to cover the base. Spoon the tomato mixture over the base and spread in an even layer. Arrange the mozzarella over the sauce then top with the roasted vegetables. Crumble the goat’s cheese over the top and place on a baking sheet in the oven for 12-15 minutes.
Tip: This recipe also works well with chicken or prawns added and sometimes mixing and matching the vegetables can change the flavour. Use less or no chilli if children are eating it.
