Mussels in a spicy tomato sauce recipe

Finely chop the onions and garlic and add them to a saucepan with the olive oil, gently fry until translucent.

Add the chopped tomatoes, chilli and black pepper to the pan and stir, bubble until the sauce begins to dry a little. Once the sauce is quite dry turn the heat to high and add in the mussels and wine, cover with a lid. After two or three minutes stir the mussels with the sauce and put the lid back on.

After a few more minutes and once the mussels are all fully open stir through the chopped parsley. Serve in a big bowl with some crusty bread.

Tips: No salt is noted in this recipe as the mussels are naturally salty, but taste the sauce before serving and add salt if required.

Any mussels that do not open after being cooked should be discarded.
