Oven Baked Pea and Courgette Risotto with Salmon recipe

I tried this salmon courtesy of a Tesco Orchard programme.

Set oven to 180 degrees

Toss oil, onion and salt and pepper in a large oven proof pan. Then bake for 30 minutes

Add garlic and courgettes and bake for 10 minutes

Add rice and stock and stir. Return to oven for 15 minutes. Then add the peas and cook for a further 15 minutes.

Meanwhile for the last 20 minutes bake the salmon in a little oil before adding on top.

Sprinkle with chopped dill.
