Poppy and sunflower seed healthy rolls
Customer recipe by Kelly Burr

I am trying to eat healthily which is why this bread recipe contains no fat, unless you choose to add the cheese of course. They are a third wholemeal and have seeds for added health benefits. My son who is 3 helped me make these today and we had them for lunch with french onion soup! Nommm!

dissolve the sugar in the water and att the entire sachet of yeast. Stir well and leave for 30 mins until mixture starts to bubble

pour the flour and seeds into a bowl. Make a well in the centre then add the salt around the sides

Tip the frothy yeast mixture into the well and mix with your hand until a soft dough is formed.

Knead the mixture on a floured work top (or use a food processor with a dough hook if you have one) until the mixture becomes more elastic...usually after a good 10 mins by hand

Leave the dough to prove for an hour on a windowsill in the sunlight, anywhere warm. Cover it with a greased bit of cling film.

After an hour, the dough should of doubled in size. Re knead the dough for 1 minute then form into required shapes...I usually do 5 x cottage rolls with this mixture by forming one medium sized roll, then placing one small ball of dough ontop. Usng the handle of a wooden spoon, make an indent in the top, as if you were making a double decker doughnut of sorts!

Place on a greased baking tray and cover with a damp cloth. Leave for 30mins to rise again

Bake at this temperature for 15 minutes until the rolls are golden ontop. Reduce the temperature to 180c and if you like, remove from oven and sprinkle tops with cheese before returning to the oven for another 10 minutes

Check the rolls are cooked through by picking one up in an oven glove and tapping the bottom. If it sounds hollow, they are ready. If not, return to the oven for another 5 minutes
