Posh 'n easy sesame prawn toast recipe

Whizz the prawns, garlic, ginger, egg, spring onion and light soy sauce to a lovely paste in a food processor. Transfer to a small bowl and chill the prawn paste in the refrigerator for at least 20 mins
Toast (or griddle) the bread on one side, then lightly brush the untoasted side with the sesame oil
Spread the prawn paste evenly over the toasted side of the bread and sprinkle with sesame seeds
Place the toasts on an oven rack and cook in a preheated oven at Gas 9, 240ºC, fan 220°C, for about 10 minutes or until the prawn paste is cooked and the toasts are crisp and browned.

You can either cut your bread slices into appetiser-size pieces or have larger pieces as an original and exciting main.

  • 175g (6oz) - raw prawns
  • ½ clove - garlic
  • ½ tsp - ginger, peeled and chopped
  • small egg, beaten
  • spring onion, roughly chopped
  • dash - light soy sauce (reduced salt if you like)
  • slices bread - make it as gourmet and posh as you can like, e.g. a sourdough
  • 2 tsp - sesame oil
  • sprinkle - sesame seeds, toasted
